Tsa tsai 'North Round' is a traditional stem mustard variety from southern China. Like kohlrabi, this mustard has been selected for its bulging stem, just below the petioles. This fleshy stalk is made into fermented pickles in the Sichuan region. It's also an excellent vegetable for stir-frying, which attenuates its pungent taste. Imagine a plump broccoli stalk with a mustardy taste... that's tsa tsai! 

In addition to the plump stem, we also eat the leaves, petioles and flower stalks. The seeds yield a rather mild mustard. For autumn cultivation only, since stem swelling is stimulated by the cool temperatures (between 8°C and 12°C) and short days of September-October.

This vegetable is sown at the beginning of August, in rows 40 cm apart. The small shoots are then thinned out and eaten, leaving only one plant every 20 cm. Harvesting takes place in October or November.
