Perilla frutescens, Lamiaceae (Labiatae)
Chinese green perilla, Chinese basil
Shiso is a highly aromatic annual Asian herb: its distinctive aroma and flavor are reminiscent of nail and cinnamon, cumin and basil. It is traditionally used in sushi and salads, particularly pleasant with cucumbers and in sauerkraut too! This one comes from a Korean variety with particularly delicate green leaves, and works well in a northern garden. Shiso flowers are also used as a decorative condiment and an oil can be pressed from its seeds. 45-75 cm high. 80-85 days to maturity. Seeds again!

Shiso thrives in sunny, fertile soil that's not too compact. Store seeds between -4°C and +4°C for best germination. Ideally, sow every 2 cm in the garden, after the last frosts, with the seeds barely buried, as they need to see light to germinate. Germination: 7 to 21 days. Thin out every 15-30 cm, keeping 45 cm between rows.
