Chervil is an annual or biennial plant with finely serrated, highly fragrant leaves, sweeter and more aniseed-like than parsley. In the "fines herbes" category, it's an exceptional herb that seduces us slowly, gently and subtly. At its best fresh and raw in salads, we add it at the very end of cooking in sauces, soups, omelettes and purées. Chervil thrives in cool climates, where it is easily naturalized away from the wind and strong sun, becoming sweeter as the first frosts of autumn or spring approach. It can also be grown in winter in a cool corner of the house. 25-35 cm.

Sow in waves, on the spot, on the surface, in early spring, every 3-4 weeks, or at the end of July. Make rows 20-25 cm apart, then thin to 15 cm along the row. Germination time: 7-14 days. Considering that chervil is tempted to go to seed at the summer solstice, sowing at the end of July/beginning of August gives us the maximum number of picking days, since the small, very hardy plants overwinter well up to zone 3.
