A plant native to North America that we grow mainly for its long, spindle-shaped roots, whose flesh turns pink when cooked. They are fleshy, sweet and slightly peppery, reminiscent of salsify and parsnips. The young shoots are also eaten in salads. A precious oil rich in essential fatty acids is extracted from the seeds. Edible yellow flowers. This biennial plant is drought-resistant. It prefers well-drained sandy loams in full sun and tolerates poor soils. It has found a fine place in the paths of our dry garden, where its perfect rosettes, flattened to the ground in the first year, tolerate trampling.
