The name Jacob's Cattle is a biblical reference to the patterns on this bean, which are reminiscent of the spots on the coat of a cow in Jacob's herd... These reddish-brown patterns on a white background make this one of the most beautiful dried beans!
This is an excellent bean, either freshly shelled, at around 65 days of growth, or dry, at full maturity, at around 85 days. It cooks faster than most other varieties and retains its shape during cooking.
Dwarf bean native to Maine, USA, very popular throughout New England and in regions with shorter, cooler summers.
