The rapini 'Novantina' is a noble representative of this class of vegetable typical of southern Italy, whose leaves, stems and flower buds are eaten like broccoli. Slightly bitter, it's delicious sautéed with garlic and drizzled with lemon juice. Some prefer to blanch it for a minute to remove its bitterness. Young shoots are excellent raw in salads.
