To prevent the tubers from freezing, we cannot ship them during the winter. They are, however, available for pick-up in our store during the winter. Plant apios in October and keep tubers in the fridge until planting.
They should be planted like a potato, one tuber at a time, about 4 inches deep.
At every foot, if the plant is growing on a high trellis. Every 3 feet if the plant is allowed to curl up on itself on the ground.
It is a very cold-hardy plant. Harvesting is good from the 2nd year onwards. It is advisable to peel the tubers to avoid ingesting the indigestible coating... always eat a new food in small portions to start with.
