Amaranths are tolerant plants that nevertheless prefer warmth and fertile soil. Their edible seeds are brimming with quality...but the 'Polish' amaranth is grown for its young leaves, which taste like spinach, a little peppery and overflowing with violet pigments. They enrich us with carotene, iron, calcium, protein, vitamin C, beauty and other trace elements. Grow them close together as young shoots, or spaced out for the tropical effect of mature plants, which will sport a crown of wine-red feathers up to 2 meters high in sheltered locations.

If possible, sow in the field after any danger of frost (soil: min. 16°C), covering the seeds, as light inhibits germination. Germination time: 10 to 15 days. Suggested spacing: 15 cm between plants intended for successive harvests, and up to 45 cm for full development.
