Belleville sorrel is easy to grow and is one of the first salads of spring. Perennial, it can remain in place for several years.

Its clumps of light-green leaves have a distinctly lemony taste: zest for salads, soups and fish sauces. Sorrel prefers cool, deep soil. Harvesting begins 3 months after sowing, and then as needed.
