Chervis is a hardy, perennial carrot adapted to humid environments that most vegetables don't like. Because of the gnarled appearance of its sweet, white roots, or because the seed must be stratified in the cold before germinating, and probably most of all because its roots grow deep and require extra effort to harvest, this treasure has been forgotten for over two centuries. Harvest in autumn or spring, before growth, by dividing the mother plant. Used in light stir-fries or simmered dishes, chervis is best enjoyed raw or, even better, fried.

Soak seeds overnight in fresh water, then stratify them in contact with moist potting soil for 6 weeks in the fridge. Then expose them to heat (18°C). When transplanting to the garden, after any risk of frost, leave a good 45 cm between plants.
