The young green shoots, with their finely cut stems and leaves, are of great interest to gourmets who want to make the most of their bittersweet taste, raw or cooked, in stir-fries, miso soup, rice or salads... Shungiku, or Chinese lamb's lettuce, is a fast-growing annual: harvesting can begin 5 weeks after sowing. It prefers cool spring weather, or a little shade in summer. Its yellow daisy-like flowers are simply beautiful, in bouquets or on our plates.
