Plantago coronopus, Plantaginaceae
erba stella, minutina, buckhorn plantain
Plantain corne-de-cerf forms a rosette of plume-shaped leaves with a delicate bitterness and crunchy texture, becoming sweeter as frost approaches. An ideal plant for a protected winter garden in the company of Claytonia perfoliata, the winter purslane. Can be sown from early spring to autumn. A very hardy annual native to Great Britain, where it is common, especially near the sea. In Italy's Marche region, it's an ingredient in "misticanze", a blend of wild and cultivated herbs. For mixed salads. Ripens in 50 days.
