Echalion 'Cuisse de Poulet du Poitou' is an elegant member of the onion tribe. It's an elongated bulb, swollen like a chicken leg, with a coppery tunic that peels easily. It is reminiscent of a shallot as much as an onion, hence the name 'echalion'... Its delicate pink flesh is a little more pronounced when harvested, and softens with storage. 

Its texture is that of a firm onion that retains its bite when cooked, whether braised whole in a pan or roasted in the oven. It's an excellent winter vegetable in its own right, firm and sweet. It keeps well into April and even May, the time of year when the firmer, plumper individuals are selected for replanting and flowering, for a new generation of seeds. From 2 to 5 cm in diameter and 10 to 18 cm long. Approximately 100 days to maturity after transplanting, around mid-May.

Sow indoors in March, 1 cm apart and 1 cm deep. Germinates in 10 to 12 days at 24°C. Transplant as soon as possible in May, in rows 25 cm apart, 8 to 10 cm between plants (or clumps of plants: 2-3 can be planted together). Do not bury the stem too deeply!

Alternative: Sow directly in the garden in early August, protect with a good mulch after the soil is well frozen and harvest the following summer.
