The Val-Aux-Vents shallot is a unique line of open-pollinated French shallots, selected by Richard Favreau since 2009 at Ferme Val-aux-Vents. It produces rounded bulbs with a copper-medium pink hue.
Its sugar content is very high. For this reason, it is particularly suitable for pan-fried caramelization. It keeps well from one harvest to the next. Its average size of 60 g is obtained by planting it in bunches of 3-4 individuals. Planted singly every 8 cm, it can become enormous (150-200 g), but will tend to split during the season. These seeds have been sieved for greater harvest uniformity.

We suggest sowing the 'Val-Aux-Vents' shallot in "128" multicells between 20°C and 25°C, in groups of 3-4 seeds, from late February to mid-March (10-12 weeks before planting in the garden).
Prune plants to 7-10 cm if they seem to be wilting. Transplant the 2-3 plants obtained into plugs spaced 10-15 cm apart around May 10 (or earlier if the soil is ready). Careful weeding is essential. Irrigate well, especially in May and June. Harvest when more than 50-75% of the leaves have set (mid-August). Plants can also be produced in trays from early February and transplanted individually at 2-15 cm intervals (or even more), depending on the desired final size, but this takes longer. Wider spacing produces larger shallots, but they will tend to split into two or three. Shallots are very responsive to spacing.
Shallots from seed are not recommended for vegetative propagation, as these bulbs will tend to flower, and the formation of flowering stems is to the detriment of bulb yield and quality.
