The Saint-Sacrement bean is a dwarf butter bean that can be eaten young or shelled when ripe. The seed is ivory-white, with an oxblood pattern around the navel. It resembles the 'Soldier' or 'St-Esprit à œil rouge' bean, except for the yellow pod. A traditional Lower St. Lawrence hardy variety, delicious, easy to digest and drought tolerant.
According to the woman who provided us with this treasure, a Kamouraska legend has it that on Corpus Christi, cows blocked the way for the procession, which had to take over the field where the beans were growing, sanctifying them in the process. Approximately 90 days to maturity.
