Its pungent, mustard-like flavor is traditionally preserved in vinegar. This condiment, much appreciated in Northern Europe as an accompaniment to fatty meats and fish, stimulates digestion. It's one of the best decongestants, very effective in cases of sinusitis. It is generally grown in borders or outside the vegetable garden, where its ability to re-propagate from the smallest root ball left in the ground is not a hindrance. Hardy perennial that prefers cool, deep soil. Harvest from autumn of 2nd year. 40cm to 1m high.

Plant with roots inclined, growth point upwards. Keep about 50 cm between plants in all directions. After the summer solstice, you can prune the leaves, keeping a single bunch per plant to encourage the development of the main root. Harvest in October, after the first frosts. Horseradish will survive in the ground for several years and gradually colonize the surrounding area if not contained by harvesting.
Shipments take place between June and October, depending on the harvest.
