Lamb's lettuce forms small rosettes of leaves that are very tender, soft and pleasantly fragrant, perfectly delicious on their own in salads. It's also a very appropriate green in mescluns, where it balances the dominant tastes of other greens such as chicory and arugula. 

Lamb's lettuce is sown as soon as the soil can be worked in spring, and as early as possible, as it doesn't mind the cold and will invariably go to seed as the summer solstice approaches. It cannot be grown in June or July. Sow it again later in the season, at the end of July or beginning of August, for an autumn harvest, even if it means giving it a season extension in the form of a tunnel or cloche to stretch its harvest into winter...

Sow lightly 1/2 cm deep, in rows 20-25 cm apart, and press down well with your feet or the back of a rake. Thin out every 10-15 cm. Lamb's lettuce thrives in cool, light, humus-rich soil. It can be reseeded and spread in the garden, a bit like the borage.
