This rare species of squash, which resembles a watermelon, is surprisingly versatile, with many different names and uses... It is mainly eaten in Latin America, its place of origin, as a kind of 'angel hair jam' called 'dulce de chilacayote'... when cooked, the (white) flesh takes on a noodle-like consistency, rather like spaghetti squash: a neutral taste that takes on the flavors of its accompaniments. Elsewhere in the world, we also eat its leaves, flowers and protein-rich black seeds... it's even grown as an ornamental plant! It is also used as rootstock for cucumbers and melons, making them more resistant to disease and cold. Very vigorous runner! About 90 days to maturity. Mature fruit keeps for 2-3 years or more!
