We have adopted the Japanese Watanabe Early burdock for its earliness and taste qualities. The excellence of burdock as a vegetable is recognized in Korea and Japan, where several varieties have been developed that are more tender and better adapted to cultivation. The slight bitterness of the roots, somewhat reminiscent of artichokes, harmonizes well with the sweetness of carrots.

Burdock's long, tapering root can grow to proportions that make it very difficult to harvest, and that's what we're trying to avoid by growing this variety, which, because it's early, produces a respectable-sized crop that's easy to extract from the soil from late sowing.

Burdock is a plant that is both disliked for its clinging fruit (which nonetheless inspired the inventor of Velcro) and adored for its medicinal properties (ESSIAC remedy, treatments for many skin ailments...).

Sow in June (15°C-20°C), or early July, and thin out every 30 cm. Prefers deeply loosened soil (as with grelinette) and frequent watering. Harvest in autumn or the following spring.
