Meadow salsify, like other species of Asteraceae, is a kind of vegetable sundial... Its flowers open in the morning and follow the course of the sun until midday, when they close. A pleasant daily sight in June-July for a sunny overgrown area... Its pointed leaves, turned up into crescents, its flower buds and even its cooked stem are a delight. The root can also be eaten in autumn. Hardy biennial (sometimes perennial) in Z3. 60 cm.
