Marshmallow is a wisely splendid perennial plant whose every part can be used: its velvety grey-green leaves in an infusion for bronchial tubes, the simple pale-pink flowers in an expectorant syrup, or simply as they are on salads. A concentrated decoction of the roots can be used as a substitute for stiff egg whites. With a little more reduction, you can even make glue! In France, the dried root is sold as a teething rattle.
