arroche Aurora mix

$ 4,50

Atriplex hortensis, Amaranthaceae

arroche des jardins, bonne-dame, belle-dame, chou d'amour, follette

Aurora mix is a multicolored form of this ancient vegetable, ranging from chartreuse to violet, which lights up against the light like a stained-glass window. The leaves can be eaten raw or cooked: perfect for wrapping paupiettes and terrines because they hold up well to cooking. Radiant in mixed salads, where the tender young leaves of the terminal shoot are the best. A very hardy annual that's easier to grow than spinach. It can be left to reseed in the semi-wild vegetable garden and enjoy the beauty of its flowering stalks, which can grow up to 2.50 m tall.
