Shanghai Green is a small, fast-growing bok choy with succulent pale-green stems. It's a popular vegetable because of its pleasant tender-crisp texture, mild flavor and nutritional value. It's the mildest of mustards. It's used raw in salads, but especially sautéed, braised, steamed or in soups. 21 days for baby size (15 cm), 45 days for full maturity (25 cm).

Bok choi can be sown directly in the garden in rows spaced 30-45 cm apart. Sow 0.6 cm deep, every 2 cm to produce baby size. For larger bok choi, transplant or thin out to 15 cm plant spacing. It can also be sown indoors in cells and transplanted for earlier harvesting. 

Sow from early spring to midsummer. Suitable for autumn sowing in a tunnel or other protected structure to extend the growing season.
