Arroche Opéra is a very dark purple-red form of this ancient vegetable, which lights up against the light like a stained-glass window. The leaves can be eaten raw or cooked: perfect for wrapping paupiettes and terrines because they hold up well to cooking. Radiant in mixed salads, where the tender young leaves of the terminal shoot are the best. A very hardy annual that's easier to grow than spinach. It can be left to reseed in the semi-wild vegetable garden and enjoy the beauty of its flowering stalks, which can grow up to 2.50 m tall.

Direct sowing in spring or late summer,  at 1 cm depth. Thin to 15-25 cm, rows 45-75 cm apart. Germination: 9-21 days between 10 ˚C and 18 ˚C, enhanced by light scarification with fine sandpaper and/or 24h soaking in a 0.5% H2O2 solution before sowing.
