The flesh of the Albina Vereduna beet is pure white, finer than that of red beets, with a texture reminiscent of potato, and very sweet. It will remain tender even if allowed to grow large. But it's best eaten young, picked the same day, in a warm salad, barely cooked, thinly sliced and topped with a vinaigrette. The tops are completely green and very tender. The beet to try for those who think they don't like them.

Sow 1 cm deep, ~3 cm along the row, leaving 30 cm between rows. Germination takes 7 to 15 days, at 12°C to 21°C. We thin to ~10 cm between plants (which can produce a crop of mini beets). We sow in early to mid-July for an autumn harvest.
