Perfection' bulbous fennel has been selected for northern climates. It is a variety that resists going to seed and produces beautiful, fat, medium-sized bulbs. Fennel bulbs are easy to grow in cool climates... if you don't sow them too early in the spring and don't put them through transplanting stress. They're excellent raw or steamed, braised or au gratin... Keep them tender and make sure they don't run out of water.
