Yellow-flowered variegated thistle whose young leaves and long, fleshy root are eaten. Some consider this vegetable superior to salsify and scorzonera, to which it is similar in taste. If sown in spring, it blooms in its first season and puts on a good show with its variegation and skeletal silhouette... but it's better to sow it after the summer solstice in well-supplied soil if it's the quality of the root that's important. In Spain, where it grows spontaneously, young rosettes of spring leaves are eaten dandelion-style, before they become prickly.

Sow very shallowly in warm soil, in full sun, and keep one plant every 10 cm, in rows 20 cm apart. The scolyme prefers soil that is not too heavy and rich in organic matter.
