The Petit Carré de Caen is a string bean of Norman heritage, grown and marketed in France until 1960, but now very rare. The whole green pod is eaten when young, before the threads appear, but once shelled, the dry bean is ivory-white, tasty, small and almost square, and remains firm when cooked.
