Le cirse maraîcher est un imposant chardon vivace sans épines qui pousse naturellement en sols humides dans son Eurasie natale. Ses fleurs blanc crème teintées de pourpre s’épanouissent de juillet à septembre et, quoique discrètes, sont un bon attrait pour les pollinisateurs et les papillons. Cette plante nous offre aussi la possibilité de manger ses jeunes tiges et feuilles, ainsi que sa racine, et on la cultive pour ces raisons en Inde et au Japon. Sa saveur rappelle celle de l’artichaut ou du cardon. 150 cm. Rustique au moins jusqu’en zone 4.

Soak them in water for 4 h, then press the seeds onto the surface of the potting soil (they need light to germinate) and keep well moistened. Cold stratify (-4°C to +4°C) for 6 weeks, then leave at 20°C-22°C until germination, which will take more than 15 days. Transplant to soil that's not too acid, in partial shade or full sun if it's moist enough.
