The cousteline, also known as the French scorsonerais a typical Mediterranean asteraceae. It offers a magnificent rosette of leaves with a sweet, slightly salty taste. Its texture is firm without being tough or fibrous until (and even during) flowering. Its foliage is an original and nutritious complement to our green salads. Ideal for diversifying our sources of greens. The quality of the leaves would be enhanced by a semi-shaded position of the plant in midsummer and/or constant watering. We haven't tested it yet, but both leaves and roots can be eaten cooked, as in the preboggiòna mixture of wild cooked plants from the Italian Riviera. It takes about 2 months from transplanting in the garden to the first harvest to obtain a nice handful of leaves per plant. It tolerates poor soil and dry conditions.

Sow indoors 4-6 weeks before the last frost, barely covering the seeds, between 15°C and 18°C, and transplant after any danger of frost. Or sow directly in the garden in May. The final spacing between plants about 20-30 cm apart. 

Most cousteline seeds will germinate in 10 days, but with a little patience you'll get an even better germination rate. We grew this discreet asteracea for the first time in 2023, so we can't say for sure, but we assume it will resow itself from one year to the next.
