Parsnip 'The Student' is an ancient vegetable with a particularly sweet and pleasant flavor. Depending on soil and growing conditions, it can grow up to 60 cm long and, thanks to its fleshy crown followed by a fine, supple tip, this "student" is just the thing for gently whipping up the ones you love! 95-125 days.

Sow in spring 1 cm deep, every 2.5 cm, 60 cm between rows, and leave to dry for 3 weeks. Thin to one plant every 7 cm. Parsnips are slow-rising, and may take 3 or even 4 weeks to germinate. You can soak the seeds in water for 12 to 24 hours before sowing to speed up the process, or place a board on the row immediately after sowing to conserve moisture. The roots can be harvested up to the following spring, as they survive the winter.
