organic Charlevoix peas

We were introduced to this variety of Charlevoix pea, with no real official name, as a dwarf soup pea that can grow without any support; it's a "primitive breed" that has been cultivated for several generations in the Charlevoix region. Its flowers are bicolored, the seeds speckled green and purple, like some birds' eggs. A dry pea that can be eaten in soup, or ground into a protein-rich flour to make an excellent "farinata" (or "socca"), the Mediterranean galette made with legume flour... A fine variety to use also for its edible young shoots.

Sow in spring, when soil temperature reaches a minimum of 4°C (ideally 10°C), 2-3 cm deep, 4 cm apart in rows. Replant when plants reach 10 cm in height.
