grasshopper's foot, bishop's hair, wild rabe, rampion, rapunzel

Riponce produces crisp, delicate white roots and tender leaves for salads, with the added bonus of charming blue bell-shaped flowers typical of the Campanula genus. Riponce does not like acid soils or heavy clays. Its seeds are so fine that it's best to mix them with sand and broadcast them in May/June (18°C-20°C). Germination a little slow and irregular; do not cover seeds. Press into the surface of the soil and water often. Sow a little tightly and "seedlings are thinned out successively, removing the most advanced, which are ready to be eaten when the root reaches the size of a feather pipe"informs us in Maison rustique des dames, volume 2. Thin to 20 cm between plants, keeping 25-30 cm between rows. Roots do not keep well. They are eaten as they are harvested.
