Hyssopus officinalis ssp. aristatus, Lamiaceae (Labiatae)

Rock hyssop, native to the Pyrenees, forms a small, bushy shrub that is lower and more compact than Mediterranean hyssop. It's a highly aromatic, melliferous perennial that can be tried as a condiment with vegetables and meats, or simply infused as a herbal tea. It grows well almost everywhere. Its dark-blue flowers in late summer are all turned to one side of the spike. They attract a host of foraging creatures, including hummingbirds. An excellent, little-known aromatic. 30 cm. Zone 4.
