Fiore Blu salsify is a hardy cultivar of this forgotten vegetable, which has good flavor and looks beautiful when left to flower.

Already domesticated in antiquity, salsify has remained a marginal vegetable, destined for the curious and the discerning who recognize a delicate oyster flavor in its long, white, spindle-shaped roots. The purple flowers (which close in the afternoon) are edible.

Sow directly in the garden in deep, porous soil that's not too heavy, until mid-spring, about every 1.5 cm, 1 cm deep, in rows 45-60 cm apart. Don't let the soil dry out during germination, which can take up to twenty days. Thin out every 5-7 cm.
