Strawberry spinach is a refined green, very popular with restaurateurs who know it, similar to sea spinach or arrowroot.

Picking the leaves is interesting around 4 weeks after planting, but the foliage loses some of its quality when it sets fruit. Fruiting can be spread over 3 to 4 weeks. Wait until a good proportion of the fruit on a stem has turned burgundy before picking; at this stage, the fruit becomes truly delicious. The fruit is so fragrant that you forget it's not actually very sweet. Ideally, present as a branch on salads, with desserts, starters, etc. Beware that the fruit contains a very powerful tincture.

The seed is very small and takes 10-12 days to emerge. Cover very lightly with vermiculite or very light potting soil or, if surface sowing, mist regularly. Planting: well-fertilized, well-irrigated soil, at the same time as the first lettuces. Tolerates light frosts. Plant every 30-40 cm in all directions. Closer spacing will speed up production of fruiting stems, but they will be smaller.
