Tuberous chervil is a white-fleshed, spinach-shaped tuber with a finer texture than parsnip, and an even more aromatic, delicate taste. It's a long-keeping vegetable whose aromas begin to develop two weeks after harvesting. Cultivate like a carrot, except that the seeds need at least 8 weeks of cold weather to come out of dormancy. Sow in autumn directly in the garden, or in a damp sandbag in the fridge, or in trays placed outside for transplanting. Caution! Its leaves and stems are poisonous... only the root can be eaten!

Prefer soil with a high organic matter content, such as that found in the willow groves of the Siberian steppe. Thin to 8 cm between plants in rows 20 cm apart.
