White borage isn't just a plant with star-shaped flowers, just as attractive to pollinators as the blue form... It's also an excellent leafy vegetable: very young leaves in salads and, above all, older leaves cooked in ravioli or soup, as in the delectable zuppa di borragine from southern Italy. The white-flowered borage is more compact than the blue, and its leaves are more regular and fleshy. It's the traditional variety in Aragón and Navarre, Spain, where it's commonly grown for consumption.
